Some new competitors are attempting to imply that their dual-gear juicing mechanism is as good as the original Heavy Duty (HD) Twin Gear juicing system featured in the Green Star Juice Extractor. The teeth of the Twin Gears featured in the Green Star Juice Extractor were designed with special pocket recesses to aid in processing hard vegetables like carrots. The pocket recesses create a sharper edge at the initial grinding phase of the juicing process and reduces the amount of strain exerted by the Green Star's motor when processing harder produce.

Imitation juicers have dual gears with flat teeth. As a result, they are less efficient at handling harder vegetables and require you to use more effort to push the vegetables through the juicer. This excess strain may also be transferred to the motor, possibly diminishing its useful life.

Raw Nori Rolls (Wraps)

Basically you can fill the rolls with whatever takes your fancy.

Suggestions:

Avocado (or guacamole mix)
Hummus
Finely shredded raw fish (snapper is fab or terakihi)
Sprouts, shredded lettuce, cabbage
Grated beetroot, carrot, zuchinni
Sundried tomatos, pitted olives
Finely chopped onion, crushed garlic

We often mix all of the above (or whatever is in the fridge, garden etc.) in a large bowl & add some tahini to help bind everything.

On a dry chopping board, place one sheet of nori horizontally facing you & then spread a couple of spoons of your mix onto the horizontal half of the nori sheet closest to you. Spread evenly. If you`ve not done rolls before you'll soon discover how much is the right amount. Roll the nori like a cigar or you can use a bamboo sushi mat. To seal, put a little water on the edge just before you finish rolling it. You can cut into bite sized pieces if you want (clean your knife between each cut & cut very slowly to avoid tearing the nori) or just serve as one long roll - 1 or 2 x per person. Great for picnics & a fun way to get the high minerals of the seaweed into kids as they can help you make them.

What is Cacao?

Cacao is the seed of a fruit of an Amazonian tree that was brought to Central America during or before the time of the Olmecs. Cacao beans were so revered by the Mayans and Aztecs that they used them as money!

In 1753 Carl von Linnaeus, the 18th-century Swedish scientist, thought that cacao was so important that he named the genus and species of this tree himself. He named this tree: Theobroma cacao, which literally means "cacao, the food of the gods."

The following quote from the "Historia General y Natural de las Indias" (General History and Nature of the Indies) by Fernàndez de Oviedo (1535) describes where cacao originally came from according to Mayan myhthology "Cocoa was more than a simple food. It was a divine food. Quetzalcoalt, the sacred king of the Toltechi, high priest and king of Tula, was the gardener of paradise where the first men lived. From there, he brought the cacahuaquehitl or cacaotero to his country."

"The True History of Chocolate"

This is the title of a book written by Coe and Coe. The authors a husband and wife team, both Harvard academics, intended to document the definitive history of chocolate in this book (as there are many versions of the history of chocolate). Michael Coe a meso-american expert finished the book after his wife Sophie died of cancer while working on the book. For Sophie the history of chocolate was her passion and she spent hundreds of hours tracking down centuries-old manuscripts in the libraries of Europe and North America.

cacao producing regions in MesoamericaThe Coe's refer to the pre-mayan culture of Olmecs, particularly the group based in Izapa in Xoconusco (Soconusco), Mexico as the place where the criollo variety of cacao was originally domesticated by this culture sometime between 400 B.C. and A.D.100. There are still small pockets of these original heirloom varieties of criollo cacao in semi-abondoned plantations around the ruins of Izapa, just outside Tapachula in Xoconusco. The region of Xoconusco and the cacao grown there was so prominent in their account of the true history of Chocolate that the coe's referred to it as "the diamond in the crown of the Aztec empire". The map shows the boundaries of the Aztec empire and the major cacao growing regions of the time just before the spanish conquest. You will notice the Aztecs conquered the small region of Soconusco even though it was far removed from the main part of their territory, just to be able to control the prized cacao grown in the region.

Loving Earth is currently working on a project with the Mayan Network of Organic Organizations in Mexico to restore this original variety of criollo cacao and the traditional system of Permaculture that the Mayans and the Olmecs before them used to cultivate this cacao. The raw cacao beans and nibs that we sell here are from Xoconusco and are the fruits of this project.

Cacao and Traditional Mesoamerican Life

Cacao was considered sacred by the mayans and was the major offering in most of their ceremonies. Even though the cacao bean was central to Mesoamerican life, only the very wealthy and powerful could afford to use it. The Mayan and Aztec priests and royalty drank copious amounts of a drink made from the fermented and crushed cacao seeds. This drink was called xocoatl or "bitter water" in Nahua. Later in Europe xocoatl became "chocolate." Xocoatl was used for ceremonies and religious observances. Priests used it as a part of their prayer offerings. Kings drank it for breakfast. Marriage vows were sealed by drinking xocoatl. It was a major part of every feast. During the 15th century, Nezahualcoyotl's court in Texcoco is recorded as consuming "four xipuipillis" or 32,000 beans each day. In the market place, the beans were accepted as standard currency. On market day, three beans would purchase a turkey egg, 100 beans a slave or a dugout canoe, 65-300 beans a cotton mantle. Cacao beans continued to be used as standard currency until 1887 in Mexico.The cacao of Xoconusco was considered the finest, best quality cacao by the aztec royalty and the largest annual taxes of cacao were collected from this region.

Cacao beans contain no sugar and between 12% and 50% fat depending on variety and growth conditions. There is no evidence to implicate cacao bean consumption with obesity.

Magnesium

Cacao is remarkably rich in magnesium.  Cacao seems to be the #1 source of magnesium of any food. This is likely the primary reason women crave chocolate during the menstrual period. Magnesium balances brain chemistry, builds strong bones, and is associated with more happiness. Magnesium is the most deficient major mineral on the Standard American Diet (SAD); over 80% of Americans are chronically deficient in Magnesium!

Stimulant or Superfood?

Cacao contains subtle amounts of caffeine and theobromine. However, experiments have shown that these stimulants are far different when consumed raw than cooked.

Consider the following: Experimental provings of chocolate by homeopaths indicate its stimulating effect when cooked. One experiment conducted with a decoction of roasted ground cacao beans in boiling water produced an excitement of the nervous system similar to that caused by black coffee, an excited state of circulation, and an accelerated pulse. interestingly, when the same decoction was made with raw, unroasted beans neither effect was noticeable, leading the provers to conclude that the physiological changes were caused by aromatic substances released during roasting.

MAO Inhibitors

Cacao seems to diminish appetite, probably due to its monoamine oxidase enzyme inhibitors (MAO inhibitors) - these are different from digestive enzyme inhibitors found in most nuts and seeds. These rare MAO inhibitors actually produce favorable results when consumed by allowing more serotonin and other neurotransmitters to circulate in the brain. According to Dr. Gabriel Cousens, MAO inhibitors facilitate youthening and rejuvenation.

Phenylethylamine (PEA)

Phenylethylamine (PEA) is found in chocolate. PEA is an adrenal-related chemical that is also created within the brain and released when we are in love. This is one of the reasons why love and chocolate have a deep correlation. PEA also plays a role in increasing focus and alertness.

Anandamide (The Bliss Chemical)

A neurotransmitter called anandamide, has been isolated in cacao. Anandamide is also produced naturally in the brain. Anandamide is known as "The Bliss Chemical" because it is released while we are feeling great. Cacao contains enzyme inhibitors that decrease our bodies' ability to breakdown anandamide. This means that natural anandamide and/or cacao anandamide may stick around longer, making us feel good longer, when we eat cacao.

Allergies?

A recent study showed that only one out of 500 people who thought they were allergic to chocolate actually tested positive. Allergies to chocolate are quite rare. It is typically the case that the person is in fact allergic to milk and dairy products.

How To Use Our Cacao:

1. Try eating beans & nibs straight or mixed in with nuts, seeds or/and dried fruits. Chew thoroughly and experience the taste extravaganza of raw chocolate.

Add very finely-ground & sieved cacao beans - 2-4 tbspns to taste, then honey or maple syrup - 2-3 tbspns to taste. Pour into molds and place in your fridge or freezer. Wakame Fronds - Sea Vegetable: 300g

The scientific name for wakame is Undaria.

This seaweed is well known because it is used in Japanese Miso soup. Wakame was introduced in NZ from the commercial boats and is considered a pest. As a result it can’t be harvested commercially at this stage because of the risks that it might endanger native seaweeds habitat if it is allowed to propagate.

This sea vegetable has a long black or dark-green color, feather-like leaf and it thrives in a wide variety of environments, which makes it very resilient.

It is one of the sweeter tasting sea vegetables, which requires little preparation. It has a silky, visually appealing texture and its delicate taste makes it easy to include in a variety of dishes. The black colour of the dried wakame will turn green when re-hydrating.

Mostly wakame is sold in crispy dry strips; Pacific Harvest wakame is prepared in convenient bite-size fronds that are ready to use.

It can be added directly to soups or stews at the ends of the cooking and will soak up some of the broth to get back to its original softness. When used for salads or as a vegetable, it should be soaked in cold water for 10 minutes or warm water for 3 minutes. It can also be marinated, blanched, steamed or quick roasted to be enjoyed as 'chips'.

Wakame sea vegetable is highly recommended in the Macrobiotic diet because of its highly alkaline qualities. In Japanese folk medecine, wakame is known as a cleanser and a strengthener of the blood; miso soup has been used for generations to aid in recovering from the effects of childbirth & illness & to protect from sickness.  More recently it has been discovered to help protect from the effects of radiation.

Wakame is also a good source of iodine and fiber. It is also high in calcium and iron, and is a good source of vitamin A, B12 and K.

Lúcuma (Loo-Ku-Mah) whole fruit powder is our favourite gourmet addition to all raw sweeties! It's got a rich, creamy texture and will turn your raw food creations into gourmet heavenly delights. Lúcuma powder is really versatile and tasty, blending easily and well with ice-creams, baby food, yogurts, pies, cakes, cookies, smoothies, chocolate bars and desserts of all kinds.

Lúcuma is a nutrient dense fruit from Peru. We are NZ's only certified organic importers of lúcuma. Lúcuma's posh title is lúcuma obovata or pouteria obovata. The tree is long lived, evergreen, and belongs to the Sapotaceae family -- so it's similar to the canistel and sapote. It smells divine, and tastes like maple syrup flavoured ice-cream! In Peru, the yellowy-orange fruit pulp is added to ice-cream and is Peru's favourite flavour.

Lúcuma fruit is an excellent source of carbohydrates, fibre, vitamins and minerals. It has lots of beta-carotene, niacin (B3) and iron.

This exotic Peruvian fruit is also known as the "Gold of the Incas", and is also one of the lost crops of the Incas. Peruvian culture is steeped in traditions rich in fine foods and cultural culinary delights. The Lúcuma name has been honored both spiritually and culinary since ancient times. Today, this fruit is still prominent in contemporary celebrations.

The Lúcuma tree was first seen and reported by Europeans in Ecuador in 1531. Archaeologists have found it frequently depicted on ceramics at burial sites of the indigenous people of coastal Peru. It is native and cultivated in the highlands of western Chile and Peru and possibly southeastern Ecuador where it is known to have been cultivated since ancient times. It is grown also, to a limited extent, in the Andes of eastern Bolivia and the fruit is sold in the markets of La Paz. It is most popular in central Chile, less so in Ecuador. In 1776, it was reported as planted only in the warmest parts of northern Chile. In 1912, there were a few trees growing in gardens around San José, Costa Rica where the lucmo was introduced by returning exiles in the first half of the 19th Century. In 1915, O.F. Cook collected seeds at Ollantaytambo, Peru, for the United States Department of Agriculture (S.P.I. #41332). In January of 1922, Wilson Popenoe introduced seeds from Santiago, Chile (S.P.I. #54653). There have been several attempts to grow the tree in southern Florida. It has not lived long. One specimen actually bore fruit at the Fairchild Tropical Garden, developed galls, and eventually succumbed. Lúcuma grows well in parts of Mexico and Hawaii but the fruit is not widely favoured.

About Vanilla

For centuries, vanilla beans (pods) have been one of the most familiar flavours, fundamental to western cuisine. Commonly used to flavour desserts, beverages, milk products and coffee, vanilla is one of the most loved flavours of the western palate.

It is believed, the Totonaca people of Mexico were the first cultivators of vanilla, during MesoAmerican times. They believed this exotic fruit had been bestowed upon them by the Gods, and continue to cultivate vanilla today.

In the 14th century, the Spanish conquistadors under Cortez, watched Montezuma, Emperor of the Aztecs, pulverize vanilla beans, combine them with chocolate and serve it as a drink in golden goblets to his most honoured guests. The Spanish caught on quickly and by the middle of the 15th century, were importing it to Europe to use as a flavour in the manufacture of chocolate.

As European explorers and their attendant botanical recorders and collectors combed the forests of Central and South America, vanilla beans became more common in Europe. Europeans followed the example of the tribes in the New World and used vanilla beans in the production of medicine, as a nerve stimulant and as an aphrodisiac. They also invented a few of their own uses, including the flavouring of another New World product, tobacco.

By the early 1800’s vanilla plants were growing in botanical collections in Germany and France. Horticulturists were experimenting with conditions for its growth. From Europe it was transported to Reunion, Mauritius and the Malagasy Republic. In the new tropical colonies, slave labour discovered that hand pollination of the flowers was necessary to produce vanilla beans.

From these points, vanilla plants were taken to Indonesia, the Seychelles, and the Comoros Islands. At approximately the same time, vanilla was introduced as a crop in Martinique and Guadeloupe in the Caribbean.

Today, vanilla beans grows within 20 degrees north and south of the Equator in the tropical regions of the world.

Madagascar and Indonesia grow the majority of the world’s vanilla beans. Other countries around the Pacific rim which grow and supply vanilla to the world include Papua New Guinea, Tahiti, Philippines, Fiji, Tonga, India, China, Guatemala and Costa Rica.

Our certified organic vanilla beans come in glass bottles with about 1 to 2 beans to the gram.  25g has about 15 to 20 beans.  They are organic from an indigenous grower association of Totonucans from Papantla Mexico.  This is the home of vanilla where it originally came from and this indigenous group domesticated the vanilla plant.    Mexico is the only place in the world where the vanilla plant is naturally pollinated everywhere else it has to be pollinated by hand..

They are very moist premium vanilla beans with excellent long-lasting aroma and taste.

Hormonal Balance

Cardiovascular Tonic

Caigua Powder - Organic

Caigua (Cyclanthera pedata) is native to Peru and is also called the wild cucumber. The fruit is long, curved and soft, with a pointed tip, 10 to 20 cm long. The surface is irregular with longitudinal striations and soft, curved spines, and the color varies from light to dark green. It is usually eaten as vegetable in salads. In case of disease or/and obesity it can be eaten as juice extract during a fast. It is also effective as dehydrated powder. It has various traditional medicinal usages, mainly to:

    * Control cholesterol

    * Regulates the metabolism of lipids and sugar in the blood stream, decreasing cholesterol

Caigua Powder

Caigua reduces blood cholesterol levels, especially light cholesterol (LDL) that is accumulated in arteries as lipoprotein components which are determinative agents on arteriosclerosis processes. It is doubly beneficial since it reduces LDL cholesterol (known as the bad type), while it has been shown in various clinical studies that it increases the HDL cholesterol (known as the good type). This double effect makes caigua an ideal compound for helping to control more adequate levels of blood cholesterol.

It has been said it is the most natural and the most potent fat absorber and taken together with Hercampuri, it is consumed to rejuvenate & reduce cellulite.

Pharmacological Information

The unicentric, randomized, parallel and double blind test carried out in the Cayetano Heredia University in post-menopausal women showed reduction in cholesterol levels with a dosage of 1800 mg of micro-pulverized caigua daily. Hypercholesterol was reduced from 75% to 12.5%. It was shown that the levels of the LDL cholesterol decreased, while that of HDL cholesterol increased.

Another study realized by the same University in 60 adults for a period of 12 weeks registered the reduction of LDL cholesterol by 23% and increase of HDL cholesterol by 42% in the group treated with 6 capsules daily. In the cases of hypercholesterolaemia, treatment with 6 capsules daily normalized the levels of seric cholesterol in 82% of the cases.

A preclinical study showed a decrease in cholesterol levels from the 332.4 in the control group to 128.4 in the group treated with freeze-dried caigua at a dosage of 40mg/100g of diet for a period of 8 weeks. Results from clinical studies on adult male and females in Peru suggest that dehydrated Caigua resulted in an adequate treatment for cases of hyper-cholesterolemia and/or hypertriglyceridemia.

A preclinical study compared the anti-inflammatory effect of caigua, administered intra-peritoneum, with that of ibuprofin, showing an anti-inflammatory effect of 57% in the case of caigua at the maximum dosage investigated, as compared with 35.7%in the case of ibuprofin. The effect was shown to be dosage dependent. A similar study using oral administration showed a more moderate effect with respect to the percentage inhibition of inflammation, but always dosage dependent.

Cinnamon: The Amazing Spice That Can Help Support Healthy Blood Sugar Levels, Blood Lipids, and Blood Pressure

Cinnamon has been used for thousands of years as a spice and medicine. It’s mentioned in the Bible as an ingredient in the oils used to anoint Moses, and as a token of friendship. Mourners burned cinnamon on funeral pyres in ancient Rome in order to cover up the smell of burning flesh.


In ancient Egypt, cinnamon was used as a medicine and an embalming agent, and at times it was even considered more precious than gold. It was also popular in China, and is mentioned in one of the earliest books on Chinese botanical medicine. 1


Today cinnamon is widely used in Ayurvedic medicine (traditional Indian medicine) to treat diabetes in India. And recently Richard Anderson and his team at the US Department of Agriculture’s Human Nutrition Research Center in Beltsville, Maryland, discovered the scientific evidence that demonstrates how cinnamon serves as an important antioxidant, and is beneficial in the prevention and control of glucose intolerance and diabetes. 2

In a recent study, people reduced their blood sugar levels by as much as 29 percent in just 40 days. That's with NO drugs, NO diet changes—just plain old cinnamon!


How does cinnamon work?


Data from the Agricultural Research Unit in Maryland was first published in the New Scientist in August 2000. The researchers found that cinnamon triggered the ability of fat cells in diabetic individuals to respond to insulin, and it also enhanced the removal of glucose.

Cinnamon contains a water-soluble polyphenol compound called MHCP (methylhydroxy chalcone polymer), which is partly responsible for its health benefits. In unpublished test tube experiments, researchers found that MHCP mimics insulin, activates its receptor, and works synergistically with insulin in cells. When mice were given MHCP, their glucose levels fell dramatically. 3

Then, to see how it would work on humans, Alam Khan, who was a postdoctoral fellow in Anderson’s lab, organized a study in Pakistan. Volunteers with type II diabetes were given one, three, or six grams of cinnamon powder a day in capsules after meals.

All responded within weeks, with blood sugar levels that were on average 20% lower than a control group. Some even achieved normal blood sugar levels. Blood sugar started creeping up again after the diabetics stopped taking cinnamon.

Cinnamon has additional benefits. It also lowered blood levels of fats and “bad” cholesterol, which are also partly controlled by insulin. And in test tube experiments, it neutralized free radicals which are elevated in diabetics. 4


Active ingredients

Anderson’s team found that cinnamon contains antioxidants called polyphenols that boost levels of three key proteins. Those proteins are important in insulin signaling, glucose transport, and inflammatory response.    In another study, the scientists investigated cinnamon’s chemistry and found that proanthocyanidin—a type of polyphenol—may have insulin-like properties. 2

Additionally, a group at the University of Calgary, Canada, found that phenolic acids, which are a major component of cinnamon extract, lowers blood glucose levels by enhancing glucose transport. The researchers concluded that cinnamon might be a valuable candidate for a new anti-diabetic drug. 5


Scientific studies:

Anti-diabetic

Insulin resistance—also called Syndrome X—is a silent condition that increases the chances of developing diabetes and heart disease. After you eat, the food is broken down into glucose, the simple sugar that is the main source of energy for the body’s cells. But your cells cannot use glucose without insulin, a hormone produced by the pancreas, which directs cells to remove excess glucose from the bloodstream. Insulin helps the cells take in glucose and convert it to energy. When the pancreas does not make enough insulin or the body is unable to use the insulin that is present, the cells can’t use glucose. Excess glucose builds up in the bloodstream, setting the stage for diabetes.

Diabetes can go undetected for up to 40 years, or until serious complications begin to surface and the pancreas just can’t keep up with the demand for insulin.  Some people produce two, three, or four times the normal amount of insulin.  Yet, because the cells have lost their sensitivity to the hormone, they require even more of it to maintain normal glucose levels. The end result is often type II diabetes.

Type II diabetes kills 100 million people prematurely each year. In patients with the condition, fat and muscle cells gradually lose their ability to respond to insulin. As a result, glucose builds up in the blood, causing symptoms such as fatigue, weight loss, blurred vision and neuropathy (resulting in numbness in extremities), and circulatory problems.

The good news is that cinnamon extract dramatically helps to reduce risk of insulin resistance and type II diabetes.

In addition to the studies already mentioned, other recent studies found that:

  • Cinnamaldehyde, a fat soluble cinnamon compound, decreased blood glucose levels and total cholesterol and triglyceride levels in diabetic laboratory animals. 6

  • Cinnamon bark extract improved glucose metabolism in animals that were fed fructose. 7

  • Cinnamon extract given at different doses to diabetic animal models for six weeks had a regulatory role in blood glucose level and lipids, and it may have also exerted a blood glucose-suppressing effect by improving insulin sensitivity or slowing absorption of carbohydrates in the small intestine. 8

Anti-bacterial

In an evaluation of the antibacterial activity of 21 plant essential oils against six bacterial species, cinnamon came out on top. The selected essential oils were screened against six bacteria: Escherichia coli, Klebsiella pneumoniae, Pseudomonas aeruginosa, Proteus vulgaris, Bacillus subtilis, and Staphylococcus aureus. Cinnamon oil was found to inhibit all of them, even at low concentrations, and was determined to be a good source of antibacterial agents. 9

  • When cinnamon extract was tested against a resistant Candida species in five patients with HIV infection and oral candidiasis, three of the five patients exhibited improvement of their Candida infection. 10

  • A recent Chinese study of cinnamon extracts found they were effective in inhibiting the growth of various bacteria including: Staphylococcus aureus, E. coli, Enterobacter aerogenes, Proteus vulgaris, Pseudomonas aeruginosa, Vibrio cholerae, Vibrio parahaemolyticus and Samonella typhymurium, and fungi including yeasts (four species of Candida, C. albicans, C. tropicalis, C. glabrata, and C. krusei), and molds. 11

Anti-inflammatory

As an anti-inflammatory agent, cinnamon may be useful in preventing or mitigating arthritis as well as cardiovascular disease. And as scientists increasingly understand the relationship between inflammation and insulin function in Alzheimer’s (causing some to refer to the neurodegenerative disease as “type 3 diabetes”), cinnamon’s ability to block inflammation and enhance insulin function may make it useful in combating that disease as well. 12

Helps regulate blood pressure

Many nutrients and nutraceuticals—including cinnamon extract—that enhance insulin sensitivity and/or reduce circulating insulin concentrations are capable of lowering blood pressure. When cinnamon was added to the diets of laboratory animals that included sucrose for 3-4 weeks, their blood pressure was reduced to the same levels as the animals that ate a non-sucrose diet. 13

The yacón is a distant relative of the sunflower with edible tubers & leaves. It grows in the warm, temperate Andean valleys at elevations below 3,500 m. It's delicious edible tubers, which are sweet and low in calories, hold a variety of benefits. Yacon also acts as a prebiotic. The undigested portion of yacon serves as food for “friendly” bacteria, such as Bifidobacteria and Lactobacillus species, in the colon. Clinical studies have shown that administering inulin can increase the number of these friendly bacteria in the colon which in turn enhances our immune system while simultaneously reducing the population of harmful & bacteria  & suppresses putrefactive pathogens such as Candida albicans. Yacon helps the intestines to function efficiently and eliminate toxins and waste products from the body.

Purple corn, a variety of Zea mays, is an Andean crop from low valleys locally called maiz morado. Grown in South America and in particular Peru for thousands of years, it is cultivated in the coast, as well as in lands almost ten thousand feet high. There are different varieties of purple corn, and all of them originated from an ancestral line called “Kculli”, still cultivated in Peru. The Kculli line is very old, and ancient objects in the shape of these particular ears of corn have been found in archeological sites at least 2,500 years old in places in the central coast, as well as among the ceramics of the “Mochica” culture.  This purple corn has been extensively used as a staple food and a natural colouring dye. There are very few purple plants to be found in nature, and thus if you are to eat a true rainbow diet, this purple corn extract is a helpful and tasty addition.

Purple corn is one of nature’s richest sources of at least six different anthocyanin antioxidants - containing even more than blueberries. Purple corn also contains substantial amounts of phenolics, among other phytochemicals. Its main colourant is cianidin-3-b-glucosa. 

Recently, anthocyanins have been studied and reported to have antimutagenic, antimicrobial and anticarcinogenic properties.

Anthocyanins are a type of complex flavonoid that produce blue, purple or red colors. Anthocyanins encourage connective tissue regeneration and are anti-inflammatory. They promote blood flow and reduce cholesterol, in addition to being antioxidants. Anthocyanins seem to stabilize and protect capillaries from oxidative damage and have been shown to stabilize connective tissue, promote collagen formation, improve microcirculation and help protect blood vessels from oxidative damage.


People of the Andes make a refreshing drink from purple corn called "chicha morada" which is now recognized as a nutritive powerhouse due to its phenolic content. Phenolics are known to have many bioactive and functional properties. Research shows that crops with the highest total phenolic and anthocyanin content also have the highest antioxidant activity.

Purple Corn has higher antioxidant capacity and antiradical kinetics than blueberries and higher or similar anthocyanin and phenolic contents.

Purple Corn Flour

Purple corn flour is made from simply grinding the kernels of the corn into a flour. In Peru the flour is called Harina de Maiz and is used like wheat flour is used here - that is for just about everything.

Algorroba (Prosopis juliflora) is a leguminous plant found in South America that was spread to arid zones around the world, including the southwestern U.S., where it is known as mesquite. Algorroba trees growing wild in desert areas of northern Peru are extremely well adapted to adverse weather and soil conditions. However, this assay does not differentiate between true B12 (cobalamin) and similar compounds (corrinoids) that cannot be used in human metabolism. Cyanotech, a grower of spirulina, claims to have done a more recent assay, which has shown Spirulina to be a significant source of cobalamin. However the assay is not published for scientific review and so the existence of this assay is in doubt.

1. What quantities of Goji Berries should I consume daily?

The Tibetan Medical College in Lhasa Tibet recommends 5 - 25 grams daily as being the recommended daily adult dose for general well being. For those with illness of those feeling unwell or with particularly low energy the The Tibetan Medical college recommends a minimum of 15 grams daily and up to 30 grams daily.

2. How should I eat the Goji's?

Go ahead and enjoy our wonderful Goji Berries straight out of the pack. Another great way is to make a cup of Goji Tea. Boil up some water and pour over 10-15 Goji Berries at the bottom of your cup, let sit for 3-5 minutes or until cool enough to drink and savour your freshly made cup of Goji Tea. In the morning they are also great on Muesli, in yogurt or added to fruit salad.  Add Gojis to salads, smoothies, cookies, muffins and cakes. Whole berries are whole food containing proteins, essential fatty acids, and have no depleted nutrients that can occur when a fruit is juiced. Many Goji Juices on the market contain preservatives, added sugars, fillers such as Apple & Pear juice and are high in sugars.

Choice (Australian Consumer) has tested goji juices in Australia including Himalayan Goji Juice 90% concentrate and found only a very low ORAC rating of 18,999 compared to Tibet Authentic Goji Berries of 27,500.  Many juices contain only 20% goji juice concentrate.

Maca (Lepidium Peruvianum Chacon) is a Peruvian root vegetable that looks very much like a turnip or radish. It is grown in the Junin district of the peruvian andes at an altitude of between 4,100 and 4,500 m above sea level, a region of intense sunlight, winds and below freezing temperatures, where no other crops can survive.

It was originally domesticated by the Pumpush people of Junin in Peru, a pre-incan culture, who subsisted on it as their main staple crop. Maca plant was domesticated about 2,000 years ago by the Incas; primitive cultivars of maca have been found in archaeological sites dating back as far as 1,600 B.C.

The plant is grown from seed and root maturation generally occurs within seven months. Its appearance may be described as a shrub with a low-growing, mat-like stem arrangement, small, off­white flowers, and scalloped leaves. The root can be one of several colors (cream, cream-purple, purple or black) and is of comparable shape to a turnip or radish.

Dosage

For the ancient Incans and modern day Peruvians, especially in the Junin district of the Andes, maca is a staple food. So you can eat as much as you like, the more you eat the more energy and overall vigour you will experience. Maca is non-toxic, has no dangerous side affects and no withdrawal symptoms. So the quantity you can take really depends on what you want to achieve. This is why we do not put Maca into capsules and why we make it available at an affordable price so that people can consume it in appropriate quantities and experience the full benefit.

To start off with we recommend 1 teaspoon (if you feel a little queazy in the stomach reduce it to 1/2 a teaspoon for several days until your body adjusts to it). Then you can build up to 25g a day or approximately 5 teaspoons.

The only warning we have is that if you have a partner and you are taking lots of maca we recommend that your partner also take maca as it is a potent aphrodisiac - if you are concerned about this then just reduce the amount you are taking.

The certified organic indigenous growers use an age old system of permaculture, where the cacao trees are planted under the native forest canopy, along with other fruit trees, such as mango, avocado, papaya etc. All of these trees add their distinctive nuances to the fine multi-floral flavor of this exquisite cacao.

Association of cacao producers of Satipo

Satipo is a region that sits at the edge of Amazon basin at the base of the Andes mountain range. In this area Loving Earth works with 4 small producer groups that are grouped under the umbrella association of cacao producers of Satipo that consists of 164 families in total. This association is certified organic by Control Union and is a member of the Fair Trade Association.  This ensures the cacao is certified organic and fairly traded. Each family has approximately 2 hectares of criollo cacao and coffee bushes grown in the understory of larger trees - mainly coconut and other forest trees. The cacao of this region is known locally as the queen of cacao due to its fine aroma and distinctive flavour that is typical of South American criollos. With the increasing demand for this quality organic cacao the association has been steadily growing by introducing more producers to the organic farming methods and post harvest processing techniques. The association has set up a facility where they can process the cacao beans into cacao liquor and then cold press the liquor into powder and butter. This has taken some local ingenuity as cacao presses are normally heated to 80ºC so that they can operate efficiently. Cold pressing the cacao is a more laborious process and the cacao powder is left with a higher percentage of butter than the conventionally processed cacao. However as you have probably experienced the end product is vastly superior both in flavour and nutritional content. Due to this unique and high quality finished product the producers are able to charge a significantly higher price for their product than the standard fair trade cacao price.

The temperature is never allowed to exceed (or even reach) 120 degrees Fahrenheit and is usually 104 degrees Fahrenheit (all other cocoa butters are exposed to temperatures as high as 300 degrees Fahrenheit!). A high-accuracy thermometer is used throughout processing. Slowly, the pure, liquid cacao butter begins to sift off into a stainless steel valve that takes the cacao butter into a separate container where it is allowed to solidify and then packaged for shipment!

It takes approximately 2.5 to 3 kgs of raw cacao nibs/beans to create 1 kg of raw Cacao Butter.

What is Cacao?

Cacao is the seed of a fruit of an Amazonian tree that was brought to Central America during or before the time of the Olmecs. Cacao beans were so revered by the Mayans and Aztecs that they used them as money!

In 1753 Carl von Linnaeus, the 18th-century Swedish scientist, thought that cacao was so important that he named the genus and species of this tree himself. He named this tree: Theobroma cacao, which literally means "cacao, the food of the gods."

Cacao beans contain no sugar and between 12% and 50% fat depending on variety and growth conditions. There is no evidence to implicate cacao bean consumption with obesity.

Magnesium

Cacao is remarkably rich in magnesium.  Cacao seems to be the #1 source of magnesium of any food. This is likely the primary reason women crave chocolate during the menstrual period. Magnesium balances brain chemistry, builds strong bones, and is associated with more happiness. Magnesium is the most deficient major mineral on the Standard American Diet (SAD); over 80% of Americans are chronically deficient in Magnesium!

Stimulant or Superfood?

Cacao contains subtle amounts of caffeine and theobromine. However, experiments have shown that these stimulants are far different when consumed raw than cooked.

Consider the following: Experimental provings of chocolate by homeopaths indicate its stimulating effect when cooked. One experiment conducted with a decoction of roasted ground cacao beans in boiling water produced an excitement of the nervous system similar to that caused by black coffee, an excited state of circulation, and an accelerated pulse. interestingly, when the same decoction was made with raw, unroasted beans neither effect was noticeable, leading the provers to conclude that the physiological changes were caused by aromatic substances released during roasting.

MAO Inhibitors

Cacao seems to diminish appetite, probably due to its monoamine oxidase enzyme inhibitors (MAO inhibitors) - these are different from digestive enzyme inhibitors found in most nuts and seeds. These rare MAO inhibitors actually produce favorable results when consumed by allowing more serotonin and other neurotransmitters to circulate in the brain. According to Dr. Gabriel Cousens, MAO inhibitors facilitate youthening and rejuvenation.

Phenylethylamine (PEA)

Phenylethylamine (PEA) is found in chocolate. PEA is an adrenal-related chemical that is also created within the brain and released when we are in love. This is one of the reasons why love and chocolate have a deep correlation. PEA also plays a role in increasing focus and alertness.

Anandamide (The Bliss Chemical)

A neurotransmitter called anandamide, has been isolated in cacao. Anandamide is also produced naturally in the brain. Anandamide is known as "The Bliss Chemical" because it is released while we are feeling great. Cacao contains enzyme inhibitors that decrease our bodies' ability to breakdown anandamide. This means that natural anandamide and/or cacao anandamide may stick around longer, making us feel good longer, when we eat cacao.

Allergies?

A recent study showed that only one out of 500 people who thought they were allergic to chocolate actually tested positive. Allergies to chocolate are quite rare. It is typically the case that the person is in fact allergic to milk and dairy products.

Professor Nicolai Tsitsin, a biologist and experimental botanist of the Longevity Institute of the former USSR, studied centenarians in the Caucasus mountains of Georgia and discovered many Georgians living past 100 years and up to 150 years were beekeepers who eat raw, unprocessed honey with high concentrations of pollen. He attributed this longevity to the action of pollen, and concluded that, taken regularly, pollen will prolong the human lifespan considerably.

What is pollen? Pollen is the male element of flowers. It has enormous nutritive and medicinal properties and forms the ovules, the starting point of the production of fruits, grains, legumes and vegetables. Bees gather pollens which are mixed with nectar to make pellets that are carried into the beehive. A teaspoonful contains approximately 1,200 pellets, each pellet containing 2Ö billion grains of pollen, each capable of fertilising and creating a fruit, a vegetable, a flower, or a stalk of grain. Flower pollen possesses 185 known nutritional ingredients, including twenty-two amino acids (and more of all the eight essential ones by weight than the traditional high protein foods), twenty-seven minerals, the full range of known vitamins, plus enzymes, carbohydrates, fats, and plant growth hormones and other trace substances not yet identified.

Medical studies have shown the following benefits of pollen:

- Allergies: Pollen has an ability to immunize the body against anemophile (wind and air blown) pollens and relieves allergic symptoms.

- Anaemia: Pollen has been shown in studies to provoke a rapid increase in blood haemoglobin.

- Cancer: A US Department of Agriculture research project concluded that pollen is useful as a cancer preventative and restrictor of tumour development.

- Chelation: Pollen allows more oxygen to reach the body and brain cells by acting as an atherosclerotic flushing agent (a chelator).

Radiation: Laboratory animals exposed to high doses of radiation have been shown to have been protected by including pollen in their diet.

- Relaxation: Pollen produces a calming, tranquillising, and sedating effect without any side effects.

- Wound-healing: Pollen has been shown to increase the rate of healing, reduce scarring and prevent infection.

The United States Department of Agriculture (1992) tested and compared Bee Pollen with other fruit and vegetables and found that Bee Pollen, on a per calorie basis:

- has twice as much iron as any other common food type. Iron is essential for the effective flow of oxygen throughout the body. Bee Pollen contains over seven times more iron than beef.

- is higher in protein than most high-protein foods. Bee Pollen contains up to 50% more muscle-building protein than beef does

- is a valuable source of calcium. Strong bone development depends on high levels of dietary calcium. Bee Pollen contains twice as much calcium as milk.

- contains the strong antioxidant vitamins A (beta carotene), C and E, and was found to contain higher levels of beta carotene than all common foods except tomatoes.

- is an excellent source of three B Vitamins: Thiamin, Riboflavin and Niacin.

Bee Pollen has the highest natural level of folic acid (folate) of any common food, which may support the prostate gland and cell regeneration. Camu Camu (Mycaria Dubia) is a bushy tree that grows in black water rivers, especially along abandoned watercourses known as cochas. Growing in these swampy areas, it takes years for the tree to become mature enough to bear fruit. It also contains bioflavonoids, the amino acids serine, valine, and leucine, plus considerable quantities of thiamine, riboflavin and niacin. Camu Camu helps to promote healthy gums, eyes, and skin and supports the functions of the brain (nervous system) and heart (circulatory system).

Traditionally, native medicine practitioners and herbalists have recommended Camu Camu for:

Pharmacological Information

The Camu Camu fruit has a surprising range of medicinal effects. In joint studies with IIAP, Sandoval (2000) of Albany University has demonstrated that Camu Camu flesh has a great antioxidant power, and it inhibits the radical DPPH (1,1-diphenil-2-picrilhydrazil), surpassing that of ascorbic acid and trolox (water soluble analog of vitamin C).

Some of the extraordinary medicinal properties of this Amazon rain forest fruit are described by Gary Null, Ph.D., a nationally known nutritionist and researcher. In discussing the holistic treatment of depression he lists 19 plants containing chemical compounds with antidepressant properties. In order of potency, Camu Camu is listed second in effectiveness. Some have been able to gradually wean themselves off of their anti-depression prescription medication (such as Zoloft and Prozac) under medical supervision and substitute Camu Camu powder with no relapse into depression. Although the amount taken varies for different people, some have taken, on an empty stomach, 1/2 teaspoon of Camu Camu powder in a glass of water four times daily. Others have taken one tsp. either once or twice daily. One alternative health care provider in New York City has had twenty patients on Zoloft and Prozac gradually wean themselves off these medications while taking camu camu and they have succeeded in avoiding depression. Good results have also been noted for patients who are anxious, talkative, and those with panic attacks.

Camu Camu has been part of an effective protocol for a 14 year old boy who was hospitalized for 15 months at the age of eight for suicidal depression. This boy also has learning disabilities and Attention Deficit Disorder (A.D.D.). His psychiatrists put him on 40 mg. of Prozac, 100 mg. of Ritalin, as well as Clomadine and Imiprimine, which he remained on for years, keeping him in a barely functional, drugged state. Working with an alternative medical professional, his mother withdrew him gradually from these drugs and began a protocol which included Ginkgo Biloba, high amounts of Vitamin C and B vitamins. In the last few months she has added two teaspoons of Camu Camu (divided dose on empty stomach with water) and one capsule a day (500 mg.) of Maca to his protocol. She reports that since adding these two herbs her son's immune function has improved--he gets sick less often, his mood is better - "it has smoothed him out" - and the combination of these two herbs have increased his ability to focus.

Camu Camu is at the top of Null's list of plants with medicinal effectiveness against the herpes virus. All forms of the herpes virus lie dormant at the base of the spine and become active when the immune system is stressed beyond its ability to respond effectively against pathenogens. Common stressors include emotional upsets, other illnesses, prescription drugs, insufficient rest, poor diet, menstrual periods, vaginal yeast infections, and too much sunlight on the skin. Genital herpes is usually transmitted sexually. The principal anti-viral pharmaceutical medicine is acyclovir, which has unpleasant and even toxic side effects. The herpes virus takes a number of different forms and is widespread today as a public health problem in the United States. More than 50% of the U.S. population gets cold sores, which is the result of the herpes simplex virus 1 (HSV1). The Epstein-Barr virus is a common form of the herpes virus which may linger in the body for years, raising the total viral load which the body must combat. Yet another form of the herpes virus is genital herpes which is caused by the herpes simplex virus 2. In total, more than 80% of the U.S. population suffers from some kind of herpes infection. Null lists 19 plants which contain anti-herpetic phyto-chemicals. Camu Camu is listed as the most potent.

Tropical fruit camu-camu (Myrciaria dubia) has anti-oxidative and anti-inflammatory properties.

Abstract

BACKGROUND:

Oxidative stress as well as inflammation plays a pivotal role in the pathogenesis of atherosclerosis. Although, various anti-oxidative dietary supplements have been evaluated for their ability to prevent atherosclerosis, no effective ones have been determined at present. "Camu-camu" (Myrciaria dubia) is an Amazonian fruit that offers high vitamin C content. However, its anti-oxidative property has not been evaluated in vivo in humans.

METHODS:

To assess the anti-oxidative and anti-inflammatory properties of camu-camu in humans, 20 male smoking volunteers, considered to have an accelerated oxidative stress state, were recruited and randomly assigned to take daily 70 ml of 100% camu-camu juice, corresponding to 1050 mg of vitamin C (camu-camu group; n=10) or 1050 mg of vitamin C tablets (vitamin C group; n=10) for 7 days.

RESULTS:

After 7 days, oxidative stress markers such as the levels of urinary 8-hydroxy-deoxyguanosine (P<0.05) and total reactive oxygen species (P<0.01) and inflammatory markers such as serum levels of high sensitivity C reactive protein (P<0.05), interleukin (IL)-6 (P<0.05), and IL-8 (P<0.01) decreased significantly in the camu-camu group, while there was no change in the vitamin C group.

CONCLUSIONS:

Our results suggest that camu-camu juice may have powerful anti-oxidative and anti-inflammatory properties, compared to vitamin C tablets containing equivalent vitamin C content. These effects may be due to the existence of unknown anti-oxidant substances besides vitamin C or unknown substances modulating in vivo vitamin C kinetics in camu-camu.

 How it's processed

First of all, the cacao pods are harvested from the trees and cracked open. The beans are then taken out and fermented. The level of fermentation affects the flavour; we do a low fermentation of about 45 degrees C, as otherwise the temperatures can get quite high, which affects the structure of the nutrients. The main thing that Loving Earth does differently to other chocolate makers is that we don't roast the raw cacao beans before we process them. The standard procedure in the chocolate industry is to roast the raw cacao, which helps bring out the flavour. It removes a lot of the microbiological contamination they might contain, but it also removes some of the valuable antioxidants contained within. What we do instead is wash them with a citric-based organic disinfectant. Afterwards, they're dried in large commercial dehydrators, at controlled temperatures, before being winnowed into nibs, which basically means taking the skin off them. Then we grind them into liquor, and finally we press them into powder and butter.

Basically, we get five products from this process. We get raw cacao beans, and because we've disinfected and washed them you can eat them - raw! We get raw cacao nibs, which are the beans without the skin. We get raw cacao liquor, which is the nibs ground into a paste. Then when we take the the liquor and put it into a very high-pressure press, which presses all the fat and butter out of it. So the end product is the raw cacao butter and then this hard cake that's milled into raw cacao powder. 1kg of liquor is about 50% fat, so when you press the liquor you get about 40% cacao butter and 60% powder. The powder retains about 10% fat content after pressing, and all the antioxidants plus a lot of the nutrients are concentrated in that powder.

We buy and import these five products, which we use to make our raw chocolate from scratch. When indigenous communities such as our friends in Peru manage to add as much value as possible at the point of origin, not only do we support agricultural industry, but also the development of that community. The hose just needs to be cut to the correct length and then pushed up over the tap and is secured by a heavy duty hoseclip.  Then the divertor valver supplied with your ioniser is attached to the thread at the base of the fitting.

What is Raw Cacao Powder (Chocolate Powder)?

It's created by cold-pressing our cacao beans into a cake separating the oil from the protein and fibre. The temperature is never allowed to exceed 47 degrees Celsius and is usually 40 degrees Celsius (all other cocoa powders are exposed to temperatures as high as 150 degrees Celcius!). A high-accuracy thermometer monitors the process. Slowly, the pure, liquid cacao butter begins to sift off down a stainless steel valve. The remaining dry 'cake-like' material is then cold-ground, fine-milled and sifted so that only the finest, most bio-available raw cacao particles filter through into the finished product. This allows for maximum digestion and antioxidant absorption. It has a delightful, full, antioxidant-rich chocolate flavour.

This unique technique uses absolutely no chemicals, no hexane, no solvents.

The Amazing Story of Raw Cacao Powder

ORAC antioxidant laboratory analysis confirms that there are over 25,200 ORAC units in a single spoonful of Raw Cacao Powder!

Why Antioxidants?

* Italian researchers found eating 100 grams of dark chocolate each day for 15 days lowered blood pressure in the 15-person study. How To Use Raw Cacao Powder

Here are just a few ideas for using your Raw Cacao Powder. You can:

* Add it to your favorite smoothies (one heaping tablespoon will do) and watch them instantly become Raw Chocolate masterpieces!
