What is pollen? Pollen is the male element of flowers. Theobroma Cacao - Food of the Gods

What is Cacao?

Cacao is the seed of a fruit of an Amazonian tree that was brought to Central America during or before the time of the Olmecs. Cacao beans were so revered by the Mayans and Aztecs that they used them as money!

In 1753 Carl von Linnaeus, the 18th-century Swedish scientist, thought that cacao was so important that he named the genus and species of this tree himself. He named this tree: Theobroma cacao, which literally means "cacao, the food of the gods."

The following quote from the "Historia General y Natural de las Indias" (General History and Nature of the Indies) by Fernàndez de Oviedo (1535) describes where cacao originally came from according to Mayan myhthology "Cocoa was more than a simple food. It was a divine food. Quetzalcoalt, the sacred king of the Toltechi, high priest and king of Tula, was the gardener of paradise where the first men lived. From there, he brought the cacahuaquehitl or cacaotero to his country."

"The True History of Chocolate"

This is the title of a book written by Coe and Coe. The authors a husband and wife team, both Harvard academics, intended to document the definitive history of chocolate in this book (as there are many versions of the history of chocolate). Michael Coe a meso-american expert finished the book after his wife Sophie died of cancer while working on the book. For Sophie the history of chocolate was her passion and she spent hundreds of hours tracking down centuries-old manuscripts in the libraries of Europe and North America.

cacao producing regions in MesoamericaThe Coe's refer to the pre-mayan culture of Olmecs, particularly the group based in Izapa in Xoconusco (Soconusco), Mexico as the place where the criollo variety of cacao was originally domesticated by this culture sometime between 400 B.C. and A.D.100. There are still small pockets of these original heirloom varieties of criollo cacao in semi-abondoned plantations around the ruins of Izapa, just outside Tapachula in Xoconusco. The region of Xoconusco and the cacao grown there was so prominent in their account of the true history of Chocolate that the coe's referred to it as "the diamond in the crown of the Aztec empire". The map shows the boundaries of the Aztec empire and the major cacao growing regions of the time just before the spanish conquest. You will notice the Aztecs conquered the small region of Soconusco even though it was far removed from the main part of their territory, just to be able to control the prized cacao grown in the region.

Loving Earth is currently working on a project with the Mayan Network of Organic Organizations in Mexico to restore this original variety of criollo cacao and the traditional system of Permaculture that the Mayans and the Olmecs before them used to cultivate this cacao. The raw cacao beans and nibs that we sell here are from Xoconusco and are the fruits of this project.

Cacao and Traditional Mesoamerican Life

Cacao was considered sacred by the mayans and was the major offering in most of their ceremonies. Even though the cacao bean was central to Mesoamerican life, only the very wealthy and powerful could afford to use it. The Mayan and Aztec priests and royalty drank copious amounts of a drink made from the fermented and crushed cacao seeds. This drink was called xocoatl or "bitter water" in Nahua. Later in Europe xocoatl became "chocolate." Xocoatl was used for ceremonies and religious observances. Priests used it as a part of their prayer offerings. Kings drank it for breakfast. Marriage vows were sealed by drinking xocoatl. It was a major part of every feast. During the 15th century, Nezahualcoyotl's court in Texcoco is recorded as consuming "four xipuipillis" or 32,000 beans each day. In the market place, the beans were accepted as standard currency. On market day, three beans would purchase a turkey egg, 100 beans a slave or a dugout canoe, 65-300 beans a cotton mantle. Cacao beans continued to be used as standard currency until 1887 in Mexico.The cacao of Xoconusco was considered the finest, best quality cacao by the aztec royalty and the largest annual taxes of cacao were collected from this region.

Cacao beans contain no sugar and between 12% and 50% fat depending on variety and growth conditions. There is no evidence to implicate cacao bean consumption with obesity.

Magnesium

Cacao is remarkably rich in magnesium.  Cacao seems to be the #1 source of magnesium of any food. This is likely the primary reason women crave chocolate during the menstrual period. Magnesium balances brain chemistry, builds strong bones, and is associated with more happiness. Magnesium is the most deficient major mineral on the Standard American Diet (SAD); over 80% of Americans are chronically deficient in Magnesium!

Stimulant or Superfood?

Cacao contains subtle amounts of caffeine and theobromine. However, experiments have shown that these stimulants are far different when consumed raw than cooked.

Consider the following: Experimental provings of chocolate by homeopaths indicate its stimulating effect when cooked. One experiment conducted with a decoction of roasted ground cacao beans in boiling water produced an excitement of the nervous system similar to that caused by black coffee, an excited state of circulation, and an accelerated pulse. interestingly, when the same decoction was made with raw, unroasted beans neither effect was noticeable, leading the provers to conclude that the physiological changes were caused by aromatic substances released during roasting.

MAO Inhibitors

Cacao seems to diminish appetite, probably due to its monoamine oxidase enzyme inhibitors (MAO inhibitors) - these are different from digestive enzyme inhibitors found in most nuts and seeds. These rare MAO inhibitors actually produce favorable results when consumed by allowing more serotonin and other neurotransmitters to circulate in the brain. According to Dr. Gabriel Cousens, MAO inhibitors facilitate youthening and rejuvenation.

Phenylethylamine (PEA)

Phenylethylamine (PEA) is found in chocolate. PEA is an adrenal-related chemical that is also created within the brain and released when we are in love. This is one of the reasons why love and chocolate have a deep correlation. PEA also plays a role in increasing focus and alertness.

Anandamide (The Bliss Chemical)

A neurotransmitter called anandamide, has been isolated in cacao. Anandamide is also produced naturally in the brain. Anandamide is known as "The Bliss Chemical" because it is released while we are feeling great. Cacao contains enzyme inhibitors that decrease our bodies' ability to breakdown anandamide. This means that natural anandamide and/or cacao anandamide may stick around longer, making us feel good longer, when we eat cacao.

Allergies?

A recent study showed that only one out of 500 people who thought they were allergic to chocolate actually tested positive. Allergies to chocolate are quite rare. It is typically the case that the person is in fact allergic to milk and dairy products.

3. Create a raw chocolate desert:  Mash 2 - 4 avos with some squeezed some citrus juice.  Add 1 - 2 mashed bananas, or some soaked & mashed dates.  The add 2 - 4 tbspns cacao powder or very finely-ground cacao beans or nibs .  Mix well & enjoy!

4. Create a raw chocolate bar. Heat the following ingredients in a water bath to 43 degrees C:  8 tbspns coconut oil, 2 tbspns finely-chopped cocoa butter. Add very finely-ground & sieved cacao beans - 2-4 tbspns to taste, then honey or maple syrup - 2-3 tbspns to taste. Pour into molds and place in your fridge or freezer. Eat cold and experience the truth about the food of the gods!

Our cacao unpeeled beans & nibs are from the original heirloom royal criollo cacao from Xoconusco in Mexico. By buying this organic raw cacao you are supporting a sustainable project that is rescuing this original heirloom variety of cacao, which has been grown by the mayans of Xoconusco since they originally domesticated the cacao tree over 3,000 years ago.

The certified organic indigenous growers use an age old system of permaculture, where the cacao trees are planted under the native forest canopy, along with other fruit trees, such as mango, avocado, papaya etc. All of these trees add their distinctive nuances to the fine multi-floral flavor of this exquisite cacao.

Association of cacao producers of Satipo

Satipo is a region that sits at the edge of Amazon basin at the base of the Andes mountain range. In this area Loving Earth works with 4 small producer groups that are grouped under the umbrella association of cacao producers of Satipo that consists of 164 families in total. This association is certified organic by Control Union and is a member of the Fair Trade Association.  This ensures the cacao is certified organic and fairly traded. Each family has approximately 2 hectares of criollo cacao and coffee bushes grown in the understory of larger trees - mainly coconut and other forest trees. The cacao of this region is known locally as the queen of cacao due to its fine aroma and distinctive flavour that is typical of South American criollos. With the increasing demand for this quality organic cacao the association has been steadily growing by introducing more producers to the organic farming methods and post harvest processing techniques. The association has set up a facility where they can process the cacao beans into cacao liquor and then cold press the liquor into powder and butter. This has taken some local ingenuity as cacao presses are normally heated to 80ºC so that they can operate efficiently. Cold pressing the cacao is a more laborious process and the cacao powder is left with a higher percentage of butter than the conventionally processed cacao. However as you have probably experienced the end product is vastly superior both in flavour and nutritional content. Due to this unique and high quality finished product the producers are able to charge a significantly higher price for their product than the standard fair trade cacao price.

Our Cacao Butter is created through a proprietary cold-pressed method. This process begins by cold-pressing raw, organic Cacao Nibs into a "cake" in such a way that the oil begins to separate from the protein and fiber. The temperature is never allowed to exceed (or even reach) 120 degrees Fahrenheit and is usually 104 degrees Fahrenheit (all other cocoa butters are exposed to temperatures as high as 300 degrees Fahrenheit!). Slowly, the pure, liquid cacao butter begins to sift off into a stainless steel valve that takes the cacao butter into a separate container where it is allowed to solidify and then packaged for shipment!

What is Raw Cacao Powder (Chocolate Powder)?

It's created by cold-pressing our cacao beans into a cake separating the oil from the protein and fibre. Caigua (Cyclanthera pedata) is native to Peru and is also called the wild cucumber. The fruit is long, curved and soft, with a pointed tip, 10 to 20 cm long. The surface is irregular with longitudinal striations and soft, curved spines, and the color varies from light to dark green. It is usually eaten as vegetable in salads. In case of disease or/and obesity it can be eaten as juice extract during a fast. It is also effective as dehydrated powder. It has various traditional medicinal usages, mainly to:

    * Control cholesterol
    * Reduce obesity
    * Control high blood pressure
    * Regulates the metabolism of lipids and sugar in the blood stream, decreasing cholesterol

Caigua Powder

Caigua reduces blood cholesterol levels, especially light cholesterol (LDL) that is accumulated in arteries as lipoprotein components which are determinative agents on arteriosclerosis processes. It is doubly beneficial since it reduces LDL cholesterol (known as the bad type), while it has been shown in various clinical studies that it increases the HDL cholesterol (known as the good type). This double effect makes caigua an ideal compound for helping to control more adequate levels of blood cholesterol.

It has been said it is the most natural and the most potent fat absorber and taken together with Hercampuri, it is consumed to rejuvenate & reduce cellulite.

Pharmacological Information

The unicentric, randomized, parallel and double blind test carried out in the Cayetano Heredia University in post-menopausal women showed reduction in cholesterol levels with a dosage of 1800 mg of micro-pulverized caigua daily. Hypercholesterol was reduced from 75% to 12.5%. It was shown that the levels of the LDL cholesterol decreased, while that of HDL cholesterol increased.

Another study realized by the same University in 60 adults for a period of 12 weeks registered the reduction of LDL cholesterol by 23% and increase of HDL cholesterol by 42% in the group treated with 6 capsules daily. In the cases of hypercholesterolaemia, treatment with 6 capsules daily normalized the levels of seric cholesterol in 82% of the cases.

A preclinical study showed a decrease in cholesterol levels from the 332.4 in the control group to 128.4 in the group treated with freeze-dried caigua at a dosage of 40mg/100g of diet for a period of 8 weeks. Results from clinical studies on adult male and females in Peru suggest that dehydrated Caigua resulted in an adequate treatment for cases of hyper-cholesterolemia and/or hypertriglyceridemia.

A preclinical study compared the anti-inflammatory effect of caigua, administered intra-peritoneum, with that of ibuprofin, showing an anti-inflammatory effect of 57% in the case of caigua at the maximum dosage investigated, as compared with 35.7%in the case of ibuprofin. The effect was shown to be dosage dependent. A similar study using oral administration showed a more moderate effect with respect to the percentage inhibition of inflammation, but always dosage dependent.

Camu Camu Extract Powder - Organic & Wildcrafted

Camu Camu (Mycaria dubia) is a bush that grows in black water rivers, especially in those abandoned courses called "cochas", ecosystems of great social and economic importance for the Amazonian jungle of Peru. The fruit contains powerful phytochemicals with health benefits, including the amino acids serine, valine, and leucine, and more Vitamin C than any other known plant in the world. The Camu Camu fruit is approximately 2 centimeters in diameter and has a purplish red skin with a yellow pulp. Camu Camu fruit contains 30 to 60 times more Vitamin C than an orange. It has astringent, antioxidant, anti-inflammatory, emollient and nutritional properties, and also contains important levels of beta carotene, calcium, iron, niacin, phosphorus, riboflavin and thiamin.

Camu Camu is traditionally made into a juice by people of the rainforest to support the immune system, ward off viral infections, and help maintain optimal health, especially under conditions of stress and anxiety, which tend to deplete the immune system. It also contains bioflavenoids, the amino acids, serine, valine, and leucine, as well as important amounts of thiamine, riboflavin and niacin. Camu Camu helps to promote healthy gums, eyes, and skin and supports the functions of the brain (nervous system) and heart (circulatory system).

Traditionally, native medicine practioners and herbalists have recommended Camu Camu for:

  • Improving symptoms of herpes infections, including mouth blisters, genital blisters, shingles blisters and other viral infections

Pharmacological Information

The Camu Camu fruit has a surprising range of medicinal effects. In joint studies with IIAP, Sandoval (2000) of Albany University has demonstrated that Camu Camu flesh has a great antioxidant power, and it inhibits the radical DPPH (1,1-diphenil-2-picrilhydrazil), surpassing that of ascorbic acid and trolox (water soluble analog of vitamin C).

Some of the extraordinary medicinal properties of this Amazon rain forest fruit are described by Gary Null, Ph.D., a nationally known nutritionist and researcher. In discussing the holistic treatment of depression he lists 19 plants containing chemical compounds with antidepressant properties. In order of potency, Camu Camu is listed second in effectiveness. Some have been able to gradually wean themselves off of their anti-depression prescription medication (such as Zoloft and Prozac) under medical supervision and substitute Camu Camu powder with no relapse into depression. Although the amount taken varies for different people, some have taken, on an empty stomach, 1/2 teaspoon of Camu Camu powder in a glass of water four times daily. Others have taken one tsp. either once or twice daily. One alternative health care provider in New York City has had twenty patients on Zoloft and Prozac gradually wean themselves off these medications while taking camu camu and they have succeeded in avoiding depression. Good results have also been noted for patients who are anxious, talkative, and those with panic attacks.

Camu Camu has been part of an effective protocol for a 14 year old boy who was hospitalized for 15 months at the age of eight for suicidal depression. This boy also has learning disabilities and Attention Deficit Disorder (A.D.D.). His psychiatrists put him on 40 mg. of Prozac, 100 mg. of Ritalin, as well as Clomadine and Imiprimine, which he remained on for years, keeping him in a barely functional, drugged state. Working with an alternative medical professional, his mother withdrew him gradually from these drugs and began a protocol which included Ginkgo Biloba, high amounts of Vitamin C and B vitamins. In the last few months she has added two teaspoons of Camu Camu (divided dose on empty stomach with water) and one capsule a day (500 mg.) of Maca to his protocol. She reports that since adding these two herbs her son's immune function has improved--he gets sick less often, his mood is better - "it has smoothed him out" - and the combination of these two herbs have increased his ability to focus.

Camu Camu is at the top of Null's list of plants with medicinal effectiveness against the herpes virus. All forms of the herpes virus lie dormant at the base of the spine and become active when the immune system is stressed beyond its ability to respond effectively against pathenogens. Common stressors include emotional upsets, other illnesses, prescription drugs, insufficient rest, poor diet, menstrual periods, vaginal yeast infections, and too much sunlight on the skin. Genital herpes is usually transmitted sexually. The principal anti-viral pharmaceutical medicine is acyclovir, which has unpleasant and even toxic side effects. Salvia hispanica (Chia) is a plant of the genus Salvia in the family Lamiaceae native to Mexico. The word chia is derived from the Aztec word chian, meaning oily. The present Mexican state of Chiapas received its name from the Nahua "chia water or river."

Chia was cultivated by the Aztecs in pre-Columbian times. Jesuit chroniclers referred to chia as the third most important crop to the Aztecs behind only corn and beans, and ahead of amaranth. Tribute and taxes to the Aztec priesthood and nobility were often paid in chia seed.

A great benefit of the chia seed is its durability. Unlike flax-seeds, chia can be stored for long periods without becoming rancid, and does not require grinding. Chia also contains higher levels of omega 3 fatty acids than flax-seeds, yielding 25-30% extractable oil, mostly α-linolenic acid (ALA).  Chia seeds typically contain 20% protein, 34% oil, 25% dietary fiber (mostly soluble with high molecular weight), and significant levels of antioxidants (chlorogenic and caffeic acids, myricetin, quercetin, and kaempferol flavonols). The oil from chia seeds contains a very high concentration of omega-3 fatty acid — approximately 64%. Chia seeds contain no gluten and trace levels of sodium.Chia is also is a source of antioxidants and a variety of amino acids. For all these health related benefits, chia is in the process of application before the EU authorities to be considered as a novel food.

Two tablespoons of chia – about 25 grams – provide about seven grams of fibre. This dose also includes calcium, phosphorous, magnesium, manganese, copper, niacin, and zinc.

In a preliminary study from the University of Toronto (2006), researchers gave 21 diabetics either a supplement made from chia, or grains with similar fibre content. The results were interesting. After three months, blood pressure from the chia group dropped 10 points diastolic and 5 points systolic., while the blood pressure from the grain group remained steady.

Taste-wise, chia seeds have a nutty flavour, and are a healthful addition to the diet sprinkled on cereals, yogurt or salads. You can also eat them whole or mix them into flour when baking bread, muffins or other baked goods.  They are also great to sprout,

Known as the running food, its use as a high energy endurance food has been recorded as far back as the ancient Aztecs. It was said the Aztec warriors subsisted on chia seed during the conquests. The Indians of the south west would eat as little as a teaspoon full when going on a 24 hour forced march. Indians running form the Colorado River to the California coast to trade turquoise for seashells would only bring the Chia seed for their nourishment. 

Chia is grown commercially in its native Mexico, and in Bolivia, Argentina, Ecuador and Guatemala. In 2008, Australia was the world's largest producer of chia. A similar species, golden chia, is used in the same way but not widely grown commercially. Salvia hispanica seed is marketed most often under its common name "Chia," but also under several trademarks, including "Sachia," "Anutra," "Chia Sage," "Salba," and "Tresalbio."

Chia is an annual herb growing to 1m tall, with opposite leaves 4 – 8cm long and 3 – 5cm broad. Its flowers are purple or white and are produced in numerous clusters in a spike at the end of each stem. Chia seeds are typically small ovals with a diameter of about one millimeter. They are mottle-colored with brown, gray, black and white.

How to Use Chia

Chia seed may be eaten raw as a dietary fiber and omega-3 supplement. Grinding chia seeds produces a meal called pinole, which can be made into porridge or cakes. Chia seeds soaked in water or fruit juice is also often consumed and is known in Mexico as chia fresca. The soaked seeds are gelatinous in texture and are used in gruels, porridges and puddings. Ground chia seed is used in baked goods including breads, cakes and biscuits.

Chia sprouts are used in a similar manner as alfalfa sprouts in salads, sandwiches and other dishes.

If you try placing a spoonful of chia in a glass of water and leaving it for approximately 30 minutes or so, when you return the glass will appear to contain not seeds or water, but an almost solid gelatin. This gel-forming reaction is due to the soluble fiber in the chia. Researchers believe this same gel-forming phenomenon takes place in the stomach when food containing these gummy fibers, known as mucilages, are eaten. The gel that is formed in the stomach creates a physical barrier between carbohydrates and the digestive enzymes that break them down, thus slowing the conversion of carbohydrates into sugar.

In addition to the obvious benefits for diabetics, this slowing in the conversion of carbohydrates into sugar offers the ability for creating endurance. Carbohydrates are the fuel for energy in our bodies. Prolonging their conversion into sugar stabilises metabolic changes, diminishing the surges of highs and lows creating a longer duration in their fueling effects.

One of the exceptional qualities of the Chia seed is its hydrophilic properties, having the ability to absorb more than 12 times its weight in water. Its ability to hold on to water offers the ability to prolong hydration. Fluids and electrolytes provide the environment that supports the life of all the body’s cells. Their concentration and composition are regulated to remain as constant as possible. With chia seeds, you retain moisture, regulate, more efficiently, the bodies absorption of nutrients and body fluids. Because there is a greater efficiency in the utilization of body fluids, the electrolyte balance is maintained.

Fluid and electrolyte imbalances occur when large amounts of fluids are lost resulting from vomiting, diarrhea, high fever, or more commonly from sweating? The loss of extracellular fluid occurs in these conditions. Intercellular fluid then shifts out of cells to compensate, causing abnormal distribution of electrolytes across cell membranes resulting in cellular malfunction. Retaining and efficiently utilising body fluids maintains the integrity of extracellular fluids, protecting intercellular fluid balance. The results of which ensure normal electrolyte dispersion across cell membranes (electrolyte balance), maintaining fluid balances, resulting in normal cellular function.

Chia seeds are the definitive hydrophilic colloid for the 21 century diet. Hydrophilic colloids, (a watery, gelatinous, glue-like substance) form the underlying elements of all living cells. They posses the property of readily taking up and giving off the substances essential to cell life. The precipitation of the hydrophilic colloids cause cell death.

The food we eat, in the raw state, consist largely of hydrophilic colloids. When cooked on the other had, precipitates its colloidal integrity. This change in the colloidal state alters the hydration capacity of our foods so as to interfere with their ability to absorb digestive juices. If we were to eat a raw diet we wouldn’t need to introduce the addition of any hydrophilic colloid to our diet. Uncooked foods contain sufficient hydrophilic colloid to keep gastric mucosa in the proper condition. But even with raw foods, they must first be partially broken down by the digestive juices, beginning in the mouth and continuing through he upper tract, to allow the gelatinous reaction to take place. Because of this upper tract digestive process, those who suffer from slow digestion, gas formation, relaxed cardia and heartburn in which the burning is due to organic acids instead of an excess of the normal hydrochloric acid, which frequently accompanies chronic inflammation disease affecting such organs as the heart, lungs, gall bladder and appendix, are usually restricted from eating raw foods. A hydrophilic colloid incorporated with these foods may be used either in connection with the patients regular food or with whatever diet the physician feels is best suited for his patient.  The patient with gastric atony or nervous indigestion who complains of heartburn and/or vomiting four to five hours after eating is often helped.  There is a lessening of emptying time if the stomach and an improvement in gastric tone. 

Chia seed may be used in conjunction with almost any diet your doctor or nutritionist feels is necessary for your condition.  The Chia’s hydrophilic colloidal properties aid the digestion of any foods contributing to the patients suffering as a result of a sour stomach.  Even if you have sensitivity to certain foods, they may be tolerated with slight discomfort or none at all if a hydrophilic colloid is made a part of your diet.  The positive effects on the digestion in the upper portion of the gastrointestinal tract often leads to puree their foods may find benefits from hydrophilic colloids which may lead to eliminating the necessity for pureeing.  Even raw vegetables, green salads and fruits, which are largely restricted, may often be given to these patients with little or no discomfort after a short time.

There are several hydrophilic foods available that offer these natural benefits.  Cactus juice, beet juice, agar, the edible seaweeds, and many proprietary preparations, which include the silica gels, mucilaginous substance of vegetables origin, are among colloids that prove effective.  Each one of the above mentioned substances have one or more drawbacks.   They are either too expensive, they may produce toxic side effects, bad tasting, not readily available, insufficient hydration capability, or it is indigestible.

Chia seed, a muscle and tissue builder and an energizer of endurance with extensive hydration properties, possesses none of the above disadvantage, and because if its physiochemical properties, supports effective treatment in immediate problems of digestion.  Exactly why this should be true may be puzzling at first.  However, if we consider the effect of unusual irritation upon the nerves of the gastrointestinal canal, it is reasonable the think that a less violent and more balanced digestion might quiet the activity of the otherwise hyperactive gut.  Inasmuch as the same foods, which formerly produced irritation, may frequently be continued without harm when hydrophilic colloids are used.   The relief to nerve irritation seems to offer a logical explanation.

The change, in the lower gastrointestinal tract, is due to the effect of the hydrophilic colloid and to a more complete digestion-taking place along the entire tract due to physiochemical alterations.   Both factors are important, as there is undoubtedly a better assimilation of food that supports enhanced nutritional absorption while significantly extending necessary hydration as well as encouraging proper elimination.

As a source of protein, the Chia, after ingestion, is digested and absorbed very easily.  This results in rapid transport to the tissue and utilization by the cells.  This efficient assimilation makes the Chia very effective when rapid development of tissue takes place, primarily during growth periods if children and adolescents.  Also for the growth and regeneration of tissue during pregnancy and lactation, and this would also include regeneration of muscle tissue for conditioning, athletes, weight lifters, etc.

Another unique quality if the Chia seed is its high oil content, and the richest vegetables source for the essential omega-3 fatty acid.  It has approximately three to ten times the oil concentrations of most grains and one and a half to two times the protein concentrations of other grains.   These oils, unsaturated fatty acids, are the essential oils your body needs to help emulsify and absorb the fat soluble vitamins, A, D, E, & K.  Chia seeds are rich in the unsaturated fatty acid, linoleic, which the body cannot manufacture.  When there are rich amounts of linoleic acid sufficiently supplied to the body trough diet, linoleic and arachidonic acids can be synthesized from linoleic acid.

Unsaturated fatty acids are important for respiration of vital organs and make it easier for oxygen to be transported by the blood stream to all cells, tissues, and organs. They also help maintain resilience and lubrication of all cells and combine with protein and cholesterol to form living membranes that hold the body cells together.

Chia, as an ingredient, is a dieters dream food.  There are limitless ways to incorporate the Chia seed into your diet.  Chia must be prepared with pure water before using recipes.  The seed will absorb 9 times it’s weight in water in less than 10 minutes and is very simple to prepare.

Food Extender/Calorie Displacer:  The optimum ratio of water to seed, for most recipes, is 9 part water to 1 part seed.  One pound if seed will make 10 pounds of Chia gel.  This is the most unique structural quality of the Chia seed.  The seed’s hydrophilic (water absorbing) saturated cells hold the water, so when it is mixed with foods, it displaces calories and fat without diluting flavor.  In fact, I have found that because Chia gel displaces rather than dilutes, it creates more surface area and can actually enhance the flavor rather than dilute it. Making Chia Gel (9 to 1 ratio): Put water in a sealable container and slowly pour seed into water while whisking briskly. This process will avoid any clumping of the seed.  Wait a couple of minutes, whisk again and let stand for 5 to 10 minutes.  Whisk again before using or storing in refrigerator (Gel will keep up to 2 weeks). You can add this mix to jams, jellies, hot or cold cereals, yogurts, mustard, catsup, tarter sauce, BBQ sauce, etc..  Add the gel, between 50% to 75% by volume, to any of the non-bake mentioned foods, mix well and taste. You will notice a very smooth texture with the integrity of the flavour intact. In addition to adding up to 50% to 75% more volume to the foods used, you have displaced calories and fat by incorporating an ingredient that is 90% water. Use as a fat replacer, for energy and endurance, or for added great taste, buy substituting the oil in your breads with Chia gel. Top your favorite bread dough before baking with Chia gel (for toping on baked goods, breads, cookies, piecrust, etc., reduce the water ration to 8 parts water to 1 part Chia seed) for added shelf life.

There are additional benefits from the Chia seed aside from the nutritive enhancements when used as an ingredient. It was also used by the Indians and missionaries as a poultice for gunshot wounds and other serious injuries. They would pack the wounds with Chia seeds to avoid infections and promote haling. What is Coconut Cream Concentrate?

Coconut Cream Concentrate is certified organic whole coconut meat in concentrated form. It contains no additives* (not even water). The dried coconut meat is ground into a very fine powder, giving it a creamy consistency due to its high fat content. Since it is 70% fat, it is a rich source of pure coconut oil.

Note: this is a food, not a cooking oil.

*Since the fat content of dried coconut can vary, occasionally some of our organic coconut oil is added to keep the fat content at about 70%.

How is Coconut Cream Concentrate used?

You  can mix 1 or 2 teaspoons of Coconut Cream Concentrate with water or juice to make a creamy coconut milk drink. It is also an excellent ingredient for cooking and baking. How is Coconut Cream Concentrate different from canned coconut milks and creams?

Commercial coconut milks and creams are generally sold in cans, or sometimes boxes and tetra packs. The main ingredient in these products is water. If the fat content is 17%, it is called "coconut milk." If the fat content is 24%, it is called "coconut cream." But most of what you are purchasing is water. Coconut Cream Concentrate, on the other hand, has NO water, and is pure coconut. Unlike the commercial varieties, it also contains ALL the fiber of the coconut. Pure, dried coconut contains more fiber per gram than even oat bran! This fiber has been stripped out of commercial coconut milks and coconut creams. Also, almost all commercial coconut milks and creams have additives to prevent the water from separating from the coconut oil, and also have sulfites added to keep it white longer. When hemp was being classified by the New Zealand Food Safety Association, scientists testified that having hemp in people's diets would improve longevity, reduce the incidence of conditions like diabetes and heart disease, and would generally improve health, but the politicians didn't want a bar of it because they have a 'War on Drugs' to fight and they only wanted bad things to be associated with the cannabis plant (hemp is the non-drug variety of cannabis).  The politicians won out mostly!

History of hemp

Hemp has been in continual use by human civilization for at least 10,000 years.  The first written record of cannabis was supposedly penned by one of the early Chinese emperors around 2700 B.C.  Islamic/Arabic empires created Europe's first paper mill utilizing hemp in about 1150 A.D.  In 1563 A.D., as part of the economic and military build-up of the time (80 years war), Queen Elizabeth I orders all land owners with 60 acres or more to grow Cannabis or face a £5 fine.

For centuries the fibre of the hemp plant has been used for rope, sails and other textiles.  Early drafts of The Declaration of Independence and The Constitution were written on hemp paper.

George Washington and Thomas Jefferson both farmed hemp crops – the colonists were legally bound to grow hemp as one of their crops and could use hemp to pay their taxes. During times of shortage, farmers were sent to jail for not growing hemp.

In 1941 Popular Mechanics introduced Henry Ford's new plastic car, manufactured from and fuelled by hemp (an early bio diesel variant). Hoping to break the petroleum industries' monopoly of control on his company, Ford illegally grew hemp for over a year.

The 1942 Japanese invasion of the Philippines cut off the US supply of Manila hemp, among other vital resources. The US government distributed over 400,000 pounds of hempseed to farmers in order to limit the supply gap as much as possible, subsidizing hemp cultivation during WWII. American farmers grew about a million acres as part of that program.

In New Zealand hemp businesses began to appear, in more recent times, during the early to mid 1990s. Hemp product availability has continued to grow ever since.

By 2004, a few U.S. states had again legalised production of industrial hemp and this continues to grow.  In 2005, for the first time a New Zealand hemp seed oil was available in health stores and outlets. Last year, a successful venture by two Canterbury businesses culminated, in March of 2006 with the first harvest of Hemp on a commercial scale in New Zealand. The crop was grown spray free and required very little irrigation.

Hemp seed oil is considered to be the most nutritional of all oils available. It has a plethora of medicinal, nutritional, and cosmetic uses, making it a wonderful multi-purpose ingredient. It has been used for many years medicinally, and was even used during Ming Dynasty by the Chinese under the name of Ma Zi.

Hemp seed oil provides the body with complete protein, nutrition, and with all the essential amino acids necessary for health and wellness.

Usage instructions

The pleasantly nutty taste of hemp seed oil makes it easy to incorporate into your culinary recipes. In one tablespoon, you will receive 2.5 grams of Omega-3 fatty acids, 8 grams of Omega-6 fatty acids, and 2 grams of Omega-9 fatty acids - a perfect balance. No other single source oil has this ideal combination of essential fatty acids. Hemp seed oil is easily digestible in its raw state. It contains less than 10% saturated fats, and 70-80% polyunsaturated fatty acids, the highest of any vegetable oil . This is an unusually high level of the good oils, making this oil beneficial for culinary use. In culinary use, the oil will not clog arteries, as do saturated and trans fatty acids or shortenings.

This oil should not be fried, and should preferably be used cold. It may easily be added to salad dressings, pasta, vegetables, smoothies, soups, sauces, hummus, guacamole, pesto, or other foods after the heating/baking has been completed. If you must heat the oil, it may be gently heated for a short period of time.

Unlike flaxseed oil, hempseed oil can be used continuously without developing a deficiency or other imbalance of EFAs. This has been demonstrated in a clinical study, where the daily ingestion of flaxseed oil decreased the endogenous production of GLA.

Lúcuma is a nutrient dense fruit from Peru. We are NZ's only certified organic importers of lúcuma. Lúcuma's posh title is lúcuma obovata or pouteria obovata. The tree is long lived, evergreen, and belongs to the Sapotaceae family -- so it's similar to the canistel and sapote. It smells divine, and tastes like maple syrup flavoured ice-cream! In Peru, the yellowy-orange fruit pulp is added to ice-cream and is Peru's favourite flavour.

Lúcuma fruit is an excellent source of carbohydrates, fibre, vitamins and minerals. It has lots of beta-carotene, niacin (B3) and iron.

This exotic Peruvian fruit is also known as the "Gold of the Incas", and is also one of the lost crops of the Incas. Peruvian culture is steeped in traditions rich in fine foods and cultural culinary delights. The Lúcuma name has been honored both spiritually and culinary since ancient times. Today, this fruit is still prominent in contemporary celebrations.

The Lúcuma tree was first seen and reported by Europeans in Ecuador in 1531. Archaeologists have found it frequently depicted on ceramics at burial sites of the indigenous people of coastal Peru. It is native and cultivated in the highlands of western Chile and Peru and possibly southeastern Ecuador where it is known to have been cultivated since ancient times. It is grown also, to a limited extent, in the Andes of eastern Bolivia and the fruit is sold in the markets of La Paz. It is most popular in central Chile, less so in Ecuador. In 1776, it was reported as planted only in the warmest parts of northern Chile. In 1912, there were a few trees growing in gardens around San José, Costa Rica where the lucmo was introduced by returning exiles in the first half of the 19th Century. In 1915, O.F. Cook collected seeds at Ollantaytambo, Peru, for the United States Department of Agriculture (S.P.I. #41332). In January of 1922, Wilson Popenoe introduced seeds from Santiago, Chile (S.P.I. #54653). There have been several attempts to grow the tree in southern Florida. It has not lived long. One specimen actually bore fruit at the Fairchild Tropical Garden, developed galls, and eventually succumbed. Lúcuma grows well in parts of Mexico and Hawaii but the fruit is not widely favoured.

Maca (Lepidium Peruvianum Chacon) is a Peruvian root vegetable that looks very much like a turnip or radish. It is grown in the Junin district of the peruvian andes at an altitude of between 4,100 and 4,500 m above sea level, a region of intense sunlight, winds and below freezing temperatures, where no other crops can survive.

It was originally domesticated by the Pumpush people of Junin in Peru, a pre-incan culture, who subsisted on it as their main staple crop. Maca plant was domesticated about 2,000 years ago by the Incas; primitive cultivars of maca have been found in archaeological sites dating back as far as 1,600 B.C.

The plant is grown from seed and root maturation generally occurs within seven months. Its appearance may be described as a shrub with a low-growing, mat-like stem arrangement, small, off­white flowers, and scalloped leaves. The root can be one of several colors (cream, cream-purple, purple or black) and is of comparable shape to a turnip or radish.

Maca is considered to be one the best natural foods due to its excellent and scientifically tested properties.

Health benefits of Maca

To start off with we recommend 1 teaspoon (if you feel a little queazy in the stomach reduce it to 1/2 a teaspoon for several days until your body adjusts to it). Then you can build up to 25g a day or approximately 5 teaspoons.

The only warning we have is that if you have a partner and you are taking lots of maca we recommend that your partner also take maca as it is a potent aphrodisiac - if you are concerned about this then just reduce the amount you are taking.

Algorroba (Prosopis juliflora) is a leguminous plant found in South America that was spread to arid zones around the world, including the southwestern U.S., where it is known as mesquite. Algorroba trees growing wild in desert areas of northern Peru are extremely well adapted to adverse weather and soil conditions. This particular characteristic of all Prosopis spp. makes them a suitable plant to fight desertification, and the extension of its cultivation is recommended to stop desertification in semiarid regions and to promote development of drylands.

Mesquite meal is a traditional Native American food used as a staple food for centuries by desert dwellers, this high protein meal contains good quantities of calcium, magnesium, potassium, iron and zinc, and is rich in the amino acid lysine as well. It has a sweet, rich, molasses-like flavor with a hint of caramel which blends well into smoothies or other drinks, especially those made with cacao and maca.

The pods have traditionally been dried and ground into flours or processed into a sweetener, sweet beverage, or fermented into an alcoholic beverage.  

About Mesquite and Diabetes:

Researchers report that mesquite is highly effective in balancing blood sugar. The natural sweetness in the pods comes from fructose. Grown in South America and in particular Peru for thousands of years, it is cultivated in the coast, as well as in lands almost ten thousand feet high. There are different varieties of purple corn, and all of them originated from an ancestral line called “Kculli”, still cultivated in Peru. The Kculli line is very old, and ancient objects in the shape of these particular ears of corn have been found in archeological sites at least 2,500 years old in places in the central coast, as well as among the ceramics of the “Mochica” culture.  This purple corn has been extensively used as a staple food and a natural colouring dye. There are very few purple plants to be found in nature, and thus if you are to eat a true rainbow diet, this purple corn extract is a helpful and tasty addition.

Purple corn is one of nature’s richest sources of at least six different anthocyanin antioxidants - containing even more than blueberries. Purple corn also contains substantial amounts of phenolics, among other phytochemicals. Its main colourant is cianidin-3-b-glucosa. 

Recently, anthocyanins have been studied and reported to have antimutagenic, antimicrobial and anticarcinogenic properties.

Anthocyanins are a type of complex flavonoid that produce blue, purple or red colors. Anthocyanins encourage connective tissue regeneration and are anti-inflammatory. They promote blood flow and reduce cholesterol, in addition to being antioxidants. Anthocyanins seem to stabilize and protect capillaries from oxidative damage and have been shown to stabilize connective tissue, promote collagen formation, improve microcirculation and help protect blood vessels from oxidative damage.


People of the Andes make a refreshing drink from purple corn called "chicha morada" which is now recognized as a nutritive powerhouse due to its phenolic content. Phenolics are known to have many bioactive and functional properties. Research shows that crops with the highest total phenolic and anthocyanin content also have the highest antioxidant activity.

Purple Corn has higher antioxidant capacity and antiradical kinetics than blueberries and higher or similar anthocyanin and phenolic contents.

Purple Corn Flour

Purple corn flour is made from simply grinding the kernels of the corn into a flour. In Peru the flour is called Harina de Maiz and is used like wheat flour is used here - that is for just about everything.

Purple Corn Extract

The purple corn extract is created by juicing the purple corn then slowly, at low temperatures, evaporating off the liquid in the juice until this pure powder remains.

The yacón is a distant relative of the sunflower with edible tubers & leaves. It grows in the warm, temperate Andean valleys at elevations below 3,500 m. It's delicious edible tubers, which are sweet and low in calories, hold a variety of benefits. It has a mild sweet flavour and an unusual moist, crunchy texture slightly reminiscent of fresh-picked apple, pineapple and watermelon.

The unique market potential for yacon is as a dietetic fiber due to its unique carbohydrate composition. Most other roots and tubers store carbohydrates as starch – a polymer of glucose; yacon stores carbohydrate as fructooligosacaride (FOS) – a polymer composed mainly of fructose.

Dried yacon root powder contains 50-70% (dry basis) FOS and low proportion of simple sugars (e.g., glucose, fructose and sucrose). The human body has no enzyme to hydrolyze FOS, so it passes through the digestive tract unmetabolized, providing few calories, a marketing strength for dieters and diabetics. Yacon also acts as a prebiotic. The undigested portion of yacon serves as food for “friendly” bacteria, such as Bifidobacteria and Lactobacillus species, in the colon.
